Origins

Greendale lamb is supplied by David Lockwood, who farms in nearby Aylesbeare. After enjoying the rich grazing pastures of East Devon, the lambs are carefully selected when they reach the correct weight; they are slaughtered at a local abattoir to keep stress to a minimum. Hung for a minimum of ten days, the meat becomes even more flavoursome and tender. Our master butchers then prepare it on-site at Greendale Farm Shop, skilfully turning it into plump chops, classic roasts, burgers, meatballs and much, much more.

Butcher's Tips

‘Butterflying’ means the lamb leg has been carefully de-boned, then opened out to form a fairly flat, butterfly-like shape. This makes it thinner than a standard leg of lamb, so it won’t need as long a cooking time.

How to Cook

As a rough guide, allow 25 minutes of cooking time per 500g. Cook in a preheated oven at 210°C (Gas Mark 7) until piping hot throughout. Allow to rest for about 15 minutes before carving.

Fresh Greendale Produce - Meat and seafood will be bagged and ready to cook or freeze on delivery. All fresh meat and fish will be vacuum-packed and labelled with use-by dates and a suggested frozen shelf life. Packaging or labelling may change depending on preparation or delivery limitations. When the meat or fish has been packaged it is immediately placed in an insulated envelopes and surrounded with chilled gel-packs to keep it cool and in perfect condition.
