Our Top Spring Recipes

With days getting longer and temperatures creeping up, we naturally move to put away the stew pots and casserole dishes, and give our weekly menus a shake up in favour of something lighter. We’ve put together a list of our top recipes for Spring to help you ring the changes, and celebrate our seasonal heroes!

8. GREENDALE BREAKFAST CRAB & EGGS 

You can of course eat this at any time you like, but we think it takes breakfast (or brunch) to a whole new level!

7. CROWD-PLEASING CHOCOLATE CAKE

It’s Easter, so why not go all-out for chocolate and whip up this easy, fudgy cake! Relatively quick and easy to make, it’s perfect for unexpected guests or a post-dinner treat. 

6. RACK OF LAMB WITH MINT SALSA VERDE

Our delicious French-trimmed rack of lamb makes the perfect centrepiece for your Easter meal. We like to serve this with boiled baby potatoes, cooked while the lamb rests. 

5. PURPLE SPROUTING BROCCOLI & SPRING GREENS GRATIN

Full of fabulous greens, this hearty recipe will leave even the most veg-averse feeling satisfied, thanks to its rich, creamy sauce and golden double-cheese topping. Serves 4. 

4. WHITE FISH WITH LEEKS & SOFT HERBS

Fresh from West-Country waters, Hake is a great-tasting and more sustainable alternative to cod. Here, it’s paired with a creamy leek sauce and fresh herbs, for a taste of springtime. Serves 4.

3. GREENDALE BEEF STIR-FRY RECIPE

Sometimes time is short, but that doesn’t mean you have to compromise on a healthy, tasty meal. Apart from a bit of chopping and stirring, this recipe is pretty straightforward – it’s great to have up your sleeve for those times when you find yourself cooking against the clock. Serves 4. 

2. SPICY PAN-FRIED SPRING GREENS

A vibrant showcase for new-season spring greens, this lightly-spiced side dish is healthy, made in moments and (best of all) completely delicious. Serves 4 as a side. 

1. CAPER-DRESSED SOLE WITH POTATO SALAD

This quick and simple recipe makes the most of delicately-flavoured Lemon Sole or Dover Sole, both unfairly underrated flat fish. You can make the salad well in advance if you like, though it is lovely when the potatoes are still a little warm – and fresh salad leaves are a must. Serves 2.
