Greendale Gin takes traditional flavours as a starting point, then adds a carefully crafted twist. Using a special blend of nineteen botanicals, the recipe is designed around the seasons here at our farm, as different wild flowers and berries are foraged according to the time of year. Gorse, Heather and Blackberries are all used in the distillation process to give a delicate floral back-note to the traditional, bolder-flavoured botanicals (Juniper, Coriander and Almonds), and Greendale’s own honey is also added, combining with Cinnamon to provide a warm, subtle foil to the peppery kick of Cubeb, Grains of Paradise and Calamus Root. Smoothly layered and skilfully balanced, this is a distinctly different drink – we think it’s too good for tonic, but we’ll let you decide. Cheers!
