Pineapples have firm flesh and a strong, sweet flavour that works well in fruit salads and desserts such as Pavlovas – they can also be sliced and served alongside Gammon steaks, caramelised under the grill or baked into a classic Pineapple Upside-Down Cake.

Fresh Pineapple is delicious just as it is, though it needs some preparation before it can be eaten. To keep waste to a minimum, cut off the leaves then remove the skin, cutting downwards to avoid taking off too much flesh. Cut small, v-shaped ‘trenches’ diagonally around the Pineapple to remove the prickly ‘eyes’, then quarter the Pineapple lengthwise and slice the core out of each quarter before cutting the flesh into chunks or cubes. As a rough guide, one medium Pineapple will serve four people.

To store a whole pineapple, leave it at room temperature until it's ripe, then refrigerate it for a few days; once cut, store pineapple pieces in an airtight container in the fridge to maintain freshness.
