Steeped in myth, the Pomegranate is now recognised as something of a ‘super food’; as well as being fibre-rich, it’s a good source of vitamins A, C and E, as well as iron and antioxidants. 

Pomegranates are best eaten as they are; the seeds can be scattered into sweet and savoury salads and other dishes to add a distinctive sweet-sharp note. It can be a little tricky to peel a Pomegranate and extract the seeds, and methods vary. You can cut the fruit into quarters, then bend each piece back so that the seeds can be ‘popped’ away from the skin; others prefer to cut the fruit in half, then hold each half over a bowl (cut side down) and bash it with a rolling pin until the seeds drop out. However you do it, the end result is always worth the effort!

To store pomegranates, keep them whole in a cool, dry, well-ventilated area away from direct sunlight, either on the countertop for up to a week or in the fridge for up to two months; once you remove the seeds, store them in the refrigerator for up to a week, or freeze them for long-term storage.
