Greendale Beef & Horseradish Bites

If you have cooked a beef joint recently, use any leftovers to create these tasty little morsels. Serves 10 as part of a buffet-style spread.

Ingredients;

Leftover Roast Beef
3 tbsp Greendale Creamed Horseradish
2 tbsp Greek Yoghurt
Sea Salt and freshly ground Black Pepper

To serve;

Snipped herbs (Rosemary); your choice of small cracker we love Fresh Flour Company's Sourdough Crackers

Method
Put the horseradish and yoghurt into a bowl, season with salt and pepper and mix until well combined. Slice the roast beef as thinly as you can, then cut again into smaller strips (small enough to top your crackers comfortably). Next, take your crackers and put a half-teaspoonful of the horseradish mixture on each one. Place a strip of beef on top of the horseradish for each cracker – it looks nice if the beef is folded a little – then dot the beef with a little more of the horseradish. Sprinkle over the Rosemary, then arrange the crackers on a large plate and serve.
