Greendale Scallops with Chilli Jam

Ingredients

12 Greendale Scallops
1 jar Greendale Chilli Jam
2 tbsp Olive Oil
1 Lime, zested and juiced
3-4 sprigs Coriander, washed, leaves only
Sea Salt and freshly ground Black Pepper

Method
Place a large frying pan over a medium heat and add the oil. When the oil is hot, add the scallops and cook for about a minute, then turn them over. Scatter over the lime zest, season with salt and pepper and cook for a further minute, then sprinkle over the lime juice and take the pan off the heat. Transfer the scallops to a serving dish and carefully spoon about half a teaspoon of chilli jam on to the top of each one, then top with a coriander leaf and serve straight away.
