Winner of 'World's Best Cheese' 2017/18, the Cornish Kern is a hard cheese with soft caramel notes and a deep, savoury aroma. Developing over sixteen months within its distinctive black wax coating, the matured cheese is similar to Dutch and French/Swiss cheeses, with a close texture and delicious buttery taste.

Based in Ponsanooth, Cornwall, Lynher Dairies is now one of the most successful makers of artisan cheeses in Britain. The company has won a whole host of awards – not least for its famous Cornish Yarg – and remains committed to hand-producing unique, wonderful cheese, using only carefully selected milk from local Cornish farms.

Derived from a Gouda style cheese, the team at Lynher Dairies add nutty Alpine starter cultures to create its close texture. They scald the curd to encourage Kern’s caramelised notes and then press it into large, round moulds. After slowly applying pressure, the cheese is floated in a briny bath and then painted with a breathable black wax coating. They then leave it to mature for twenty months.

Kern (which means ’round’ in Cornish) has received global attention and praise and they’re proud to say that every single wheel comes from their small rural dairy near Truro.
