Small but perfectly formed, Lamb Riblets pack a flavour-filled punch, with nicely marbled meat and enough fat to keep them tender and tasty while cooking. They're perfect for marinading or roasting, and make great finger food – they also make a good introduction to lamb for small children.

Lamb Riblets can be roasted, braised in stews or barbecued.

Store in fridge and consume within 2-3 days of receipt, or freeze immediately. Suitable for freezing. All items are labelled with use by dates.

Greendale lamb is supplied by David Lockwood, who farms in nearby Aylesbeare. After enjoying the rich grazing pastures of East Devon, the lambs are carefully selected when they reach the correct weight; they are slaughtered at a local abattoir to keep stress to a minimum. Hung for a minimum of ten days, the meat becomes even more flavoursome and tender. Our master butchers then prepare it on_site at Greendale Farm Shop, skilfully turning it into plump chops, classic roasts, burgers, meatballs and much, much more.

After being overlooked for many years, Lamb Riblets are gaining popularity amongst British chefs and butchers. Cut from the lamb breast, they are slender, individual ribs, obtained by making cuts between the bones. Riblets offer plenty of tender meat, with a generous amount of fat – this is what makes them so tasty, as the fat renders down during cooking, leaving delicious moist meat behind.
