Carefully prepared by the Greendale butchers, this lean, tender Venison Joint makes a deliciously seasonal alternative to roast beef, pork or chicken. Because venison is naturally lean, roasting joints are best served medium-rare to avoid the meat becoming dry.

100% Venison

To roast, weigh your Venison Roasting Joint to calculate the required cooking time; as a rough guide, you’ll need to allow 20 minutes per lb (medium-rare). Next, preheat your oven to 180ºC/350ºF/Gas Mark 4. Season the joint well, heat a good glug of oil in a frying pan and then sear the meat in the pan over a medium-hot heat, turning it to ensure it browns all over. Then, place the joint in a roasting tin, cover it with tin foil and cook for the time calculated. To check the joint is cooked through, insert a skewer into the centre – any juices should run clear. Remove from the oven and allow to rest for five minutes before carving.

Store in fridge and consume within 2-3 days of receipt, or freeze immediately. Suitable for freezing. All items are labelled with use by dates.
