Spring onions (also known as scallions or green onions), have a similar flavour to onions, but are much milder. Both the green tops and the small white bulb are edible, and are good either raw or cooked.

To cook spring onions, wash them thoroughly and trim the roots and any wilted green tops. They can be used raw in salads, stir-fried for a few minutes until softened, grilled for a smoky flavour, or added to soups, omelettes, and sauces for a mild onion taste.

Store spring onions in the fridge wrapped in a damp paper towel inside a perforated bag, or place them root-side down in a glass of water with a loose plastic cover, changing the water every few days; for long-term storage, chop and freeze them, or if they have roots, regrow them in water on a windowsill.
