Stilton Cheese takes its name from the village of Stilton, Cambridgeshire, where it was originally made. Today, the PDO (Protected Designation of Origin) stipulates that Stilton can only be made in the counties of Nottinghamshire, Derbyshire and Leicestershire; currently, the cheese is made in six dairies spread across the three counties.
