Greendale Gin & Tonic Ice Lollies

Strictly for adults, these cooling lollies take the phrase ‘ice and a slice’ to a new level! If you like, you can add a teaspoon of lemon or lime juice before you fill the moulds. Makes approximately 4 lollies (please see note about quantities).

Ingredients

Method
Put the sugar into the bottom of a large jug or mixing bowl, then pour over the gin. Stir until the sugar is mostly dissolved, then add the tonic and stir again. Set aside until the tonic has stopped fizzing. Put a slice of cucumber into each of the four lolly moulds, then divide the gin mixture between the moulds, ensuring you leave a little space at the top so the contents can expand as they freeze. Freeze until solid – at least four hours, or overnight. To serve, remove the lollies from the freezer and dip the moulds in hot water – after a few seconds, you should be able to pull the lollies gently away from their moulds.
