Ultimate Turkey Sandwich Recipe
Not just any old snack, these sandwiches might take a few minutes’ work to put together but they’re definitely worth the (minimal) effort! A sort of super-BLT, with added turkey and avocado, we think this is one of the nicest ways to repurpose the remains of your roast. Makes 2 rounds of sandwiches.
Method
First, get the bacon ready; heat a heavy-based pan over a medium heat for a few moments, then add the bacon and fry for a couple of minutes on either side until cooked through and crisp – the longer you cook it, the more crisp it will be. To grill, place under a preheated grill for a couple of minutes on each side (watch it to make sure it doesn’t burn). Place the bacon on kitchen paper to drain while you start to assemble the sandwiches.
Use the mayonnaise to lightly ‘butter’ the slices of bread. Peel the avocado and remove the stone, then cut the avocado in half. Slice one half thinly, then use a fork to mash the other half together with the lime juice, smoked paprika and salt and pepper to taste. Spread the mashed avocado over two slices of bread and place the turkey slices on top, then layer on the bacon, sliced avocado and tomato. Season with salt and pepper to taste, then finish with a layer of the shredded lettuce and put the other piece of bread on the top of each sandwich. Cut each sandwich in half – you may need to secure the halves with cocktail sticks to stop them toppling – and serve.
