British Lamb - Our Guide to Lamb

Tender and delicious, British lamb is available all year round. Greendale lamb is supplied by David Lockwood, who farms in nearby Aylesbeare. A great source of iron, B vitamins and zinc, lamb is a versatile meat that lends itself well to numerous recipes; a classic roast will allow its delicate flavour to shine, while griddling with olive oil and a little lemon zest will add zing to a quick weekday meal. Choose your cut of lamb according to the way you plan to cook it. The best cuts for roasting include shoulderrump and Leg; for quicker cooking, choose loin chops, leg steaks or fillets; leg, neck and chump chops are ideal for more slowly cooked recipes. When buying lamb, be sure to look for firm, fine-grained pinkish meat with white (not yellow) fat on the outside, and a moist, velvet-like texture.
