Despite a somewhat ‘worthy’ reputation, iron-rich Kale is a delicious addition to all manner of cooked dishes, and makes a great raw salad ingredient, too – the secret is to massage your salad dressing into the prepared leaves, as this will remove any toughness. 

Kale leaves are robust and versatile. They can be boiled or steamed and dressed with butter for a simple side dish, used raw in salads and smoothies, or even tossed in a little oil and salt and oven-baked for a variation on ‘Crispy Seaweed’.

Remove excess moisture by patting it dry with paper towels, then wrap the Kale loosely in a paper towel and place it in a airtight container in the fridge; do not wash the kale until you are ready to use.
