Packed with vitamin K, vitamin C and other antioxidants, Purple Kale is just as nutritious as its green counterpart, though its flavour is a little more delicate and slightly sweeter.

Purple Kale can be cooked in the same way as green Kale, being equally robust and versatile. The leaves can be boiled or steamed and dressed with butter for a simple side dish, used raw in salads and smoothies, or even tossed in a little oil and salt and oven-baked for a variation on ‘Crispy Seaweed’.

Remove excess moisture by patting it dry with paper towels, then wrap the Kale loosely in a paper towel and place it in an airtight container in the fridge; do not wash the kale until you are ready to use.
