Strawberry Smoothie Ice Lollies Recipe

Creamy yoghurt and fresh berries are a summery match made in heaven. If your strawberries are really ripe, you may wish to use less honey - if they’re not as sweet as you’d like, use a little more. Makes approximately 4 lollies (please see note about quantities).

Ingredients

  • 150g fresh Strawberries, washed, hulled and roughly chopped
  • 150g Natural Yoghurt (we like Hollis Mead)
  • 3 tbsp Milk of your choice
  • 1 tbsp Runny Honey, or to taste
  • 1 tsp Vanilla Extract (optional)

Method

Put the prepared strawberries into the bowl of a blender, add the yoghurt, milk, honey and vanilla (if using) and pulse until you have a smooth mixture. Divide the mixture between four lolly moulds, ensuring you leave a little space at the top so the contents can expand as they freeze. Freeze until solid – at least four hours, or overnight. To serve, remove the lollies from the freezer and dip the moulds in hot water – after a few seconds, you should be able to pull the lollies gently away from their moulds.
