Yamza Pasta Arrabiata

Meaning ‘angry’ in Italian (thanks Duolingo) this arrabiata will leave you anything but!

Ingredients

1 shallot finely diced
5 cloves of finely diced garlic
Plenty of olive oil (around 150ml)
200g chopped tomatoes
1 tbsp tomato puree
1 tsp salt
Sprig of thyme
Preferred pasta

To finish

Shredded basil
Grated vegetarian parmesan cheese
Splash of ‘The Red One’
Extra drizzle of olive oil

Method

  1. Add garlic and shallot to a hot pan with a good splash of olive oil, sweat for 3 mins.
  2. Add tomatoes, tomato puree, salt, thyme, and ‘The Red One’ (if you like it extra spicy -
    alternatively, leave until the end).
  3. Pop on your saucepan lid, turn the heat to low, and simmer for 10 mins.
  4. Cook chosen pasta in salted boiling water as per package instructions.
  5. Fold arrabbiata sauce through the pasta and finish with shredded basil, parmesan cheese,
    and a decent splash of ‘The Red One’.
