It’s home-cooked and prepared using a traditional recipe which gives a light, distinctively-flavoured cure; the smoked bacon and gammon are hung over oak chips, which impart a balanced, delicious smokiness to the meat.

Gammon originates from the animal’s hind legs – the meat is cured in the same way as bacon.
