BBQ Corn with Garlic Butter
Quick and easy, these grilled corn cobs are sure to please – be warned, it’s near-impossible to eat them ‘politely’ without getting garlic butter down your chin! Recipe makes six cobs.
Method
Beat or mash the garlic and parsley into the softened butter, then place the butter on a sheet of clingfilm, roll it into a sausage shape and wrap it, and put it into the fridge to firm up. Place the corn cobs on the hottest part of your prepared barbecue, using tongs to turn them regularly. They will take about 10 minutes, depending on size. When they are nicely coloured all over, remove the cobs from the grill and serve topped with a slice of the chilled butter, so that it melts into a garlicky sauce. Keep napkins handy!
