Gorgeous Green Smoothie

This vibrant green smoothie is rich in iron and protein, and tastes pretty good, too! Serves 2.

Ingredients

1 Avocado
A large double handful of Spinach or Kale
100g prepared Pineapple Chunks (tinned ones are OK if fresh not available)
About half a large Cucumber
600ml Coconut Water

Method
Peel, stone and chop the avocado. Wash and pat dry the spinach or kale. Wash the cucumber and cut it into rough chunks. Put the avocado, spinach/kale, cucumber and pineapple chunks into a blender and give them a quick pulse. Add the coconut water and continue to process until completely smooth, then pour into glasses and serve straight away.
