Greendale Crab & Crayfish Blinis

Ingredients

Make Your Own Seafood Sauce:

  • 200ml Mayonnaise
  • 2 tbsp Tomato Ketchup
  • ½ tsp cayenne pepper, plus extra to serve
  • Dash of Tabasco & Worcestershire Sauce
  • Squeeze Lemon Juice, to taste
  • Salt and freshly ground black pepper

To Serve:

Method

Put the crab and crayfish tails into a large mixing bowl and add the seafood sauce and lemon zest. Stir well to combine, then add salt and pepper to your taste, if needed. Arrange the blinis on a large serving tray or plate, then divide the fish mixture evenly between them. Scatter a tiny sprinkling of the chives over the top of each pancake, then serve.
