Sea Bass with Pesto Dressing

Ingredients

For the sea bass

2 sea bass fillets
Salt and freshly ground black pepper
2 tomatoes, chopped
2 tbsp pine nuts
3 tbsp. olive oil
1 lemon, zest and juice

For the pesto dressing

Bunch of fresh basil, leaves only
2 tbsp pine nuts
4 tbsp olive oil
2 garlic cloves
Salt and freshly ground black pepper

Method
To make the pesto dressing, blend all the dressing ingredients in a food processor to a coarse paste, then set aside. For the sea bass, heat 2tbsp olive oil in a frying pan over a medium heat. Add the fillets to the hot pan, skin-side down, and cook for 3-4 minutes. Season to taste with salt and pepper, then turn the fillets over and cook for a further 3-4 minutes, or until the skin is crisp and golden and the fish is cooked through. Remove the fillets from the pan and place each on serving plate. Mix together the tomato, pine nuts, lemon zest and juice and 3 tbsp olive oil in a bowl, and season to taste with salt and black pepper. To serve, spoon the tomato and pine nut mixture over the sea bass fillets, then spoon over the pesto dressing.
