Buyers Guide to Lobster

You’ll find a good choice of lobster at the Greendale Farm Shop fish counter, from whole live animals to dressed meat and even freshly-prepared Lobster Thermidor. That’s largely thanks to the fact that our own potting vessels regularly works the west country waters, keeping us supplied with super-fresh, super-local lobster; our talented fishmongers do the rest!

Whole Live Lobster

For super-fresh lobster, you may want to consider buying a live animal. At Greendale Farm Shop, we keep our locally-caught live lobsters in large saltwater tanks near the fish counter, so you can choose for yourself. Once selected, the Greendale fishmongers will kill the lobster humanely for you (it is possible to do this at home, but we think it’s a job best left to the professionals), and they can also cook it for you, too – just ask. If you prefer to cook your lobster at home, be sure to do it on the day of purchase and refrigerate until needed. Whole Cooked

Cleaned and cooked on-site here at the Farm Shop, our whole cooked lobsters are ready to be cracked, picked and dressed. Available in a range of weights and sizes, in-store and online

Dressed Lobster

By ‘dressing’ we simply mean that the lobster has been cleaned and cooked, with the meat carefully removed from the shell – basically, you don’t need to do any messy prep work! Our fishmongers can dress fresh lobsters to order (please note that two days’ notice is required if ordering online/in-store), presenting the meat in a clean half-shell. Available in a selection of weights and sizes, a dressed Greendale lobster will add instant ‘wow’ factor to any buffet spread or picnic!

Lobster Meat

The simplest way to enjoy Greendale lobster! Our fishmongers hand-pick the meat from the shell and claws of a freshly-cooked lobster then carefully pack it into conveniently-sized pots. Please note that the lobster meat is not pasteurised and must be refrigerated, and consumed within 2-3 days of purchase. 

Lobster Thermidor

For high days and holidays (or perhaps ‘just because’), there are few seafood treats to top our luxurious Lobster Thermidor. Carefully prepared on-site by our fishmongers, it’s made to a traditional recipe; the lobster meat is cooked with a creamy white wine sauce, then returned to its shell and sprinkled with a little cheese. When you’re ready to serve the thermidor, just pop it under a hot grill for a few minutes, until the cheese is browned and bubbling and the sauce has warmed through. Best enjoyed on the day of purchase, or frozen immediately for up to three months.
