Iron-rich Spinach is a nutritional powerhouse, containing Vitamins A, C, K and B2, not to mention Folic Acid and Magnesium. Spinach has an affinity with eggs and cheese, including Ricotta, Feta and Blue Cheese, and also makes a super-healthy raw addition to a mixed salad. 

Spinach is best cooked simply, to preserve as much of its nutritional value as possible – steaming it briefly is ideal, though it’s worth bearing in mind that Spinach leaves shrink on cooking, so what seems like a huge amount of raw spinach will be much less when cooked.

Gently pat dry with a paper towel to remove excess moisture, then wrap it loosely in a paper towel and place it in a sealed container in the fridge.
