Devon Venison: A Sustainable Choice
During the game season, our local mid-Devon supplier, Curtis Pitts, keeps us stocked with carefully hung and matured wild venison.
Wild venison is a sustainable choice. With no natural predators in the UK, deer populations have grown significantly, leading to overgrazing and damage to woodland ecosystems. Responsible deer management helps protect biodiversity, supports deer welfare, and reduces crop damage.
Unlike farmed meat, wild venison requires no feed, water or artificial inputs, giving it a lower environmental footprint and producing fewer greenhouse gas emissions than other meats. Sourcing locally also reduces food miles and supports rural communities.
Venison is naturally lean, high in protein and free from added hormones or antibiotics, making it a healthy choice. Prized for its rich, earthy flavour and tender texture, it offers a subtle gaminess that reflects the deer's natural diet, creating a distinctive and delicious taste.
ROAST VENISON
For something really special, why not try our Roast Venison Joint or Venison Haunch this Christmas? Venison is naturally lean, and best served medium-rare; we think it makes a delicious alternative to the usual roasts.
SERVING SUGGESTIONS
For a tasty stuffing to serve alongside venison, we like Shropshire Spice Co’s Wild Mushroom, Garlic and Herb Stuffing Mix. Hearty winter veg sit well with seasonal game, too; we can thoroughly recommend the Brussels Sprouts with Chestnuts & Cream on the ‘Recipes’ page of our website, or you could whip up a big dish of buttery celeriac mash (just boil peeled potatoes and celeriac until soft, then mash together with plenty of butter and a dash of milk, and season to taste with salt and pepper).
Goes Well With…
We always like to serve up some sauce with our venison! Why not try making a spiced jus with a festive Mulled Wine; gently fry finely chopped onion and garlic, then stir in 1 tsp of brown sugar. Pour in 300ml Mulled Wine, then simmer until reduced to a syrup (about 10 minutes). Next, add 300ml hot stock and simmer until reduced by about half again, then strain, return to the heat and whisk in a generous knob of butter before serving.
For a simpler alternative, Jurgen Langbein Liquid Game Stock is perfect for making a richly-flavoured gravy – use in place of your usual stock to make a deeply tasty venison gravy.
